Class Descriptions and Menus

Below are descriptions of my classes as well as menus (subject to change a bit, based on seasonality and availability of ingredients). For details, dates, and additional information on pricing, go to my Cooking Class Details page.

Culinary Basics Classes

These classes are 2.5-3 hours long. Spots in an open group class cost $60 per person; $55 per person if you purchase 4 or more seats. For private events, the cost of one of these classes is $440 for up to 8 people and $50 per additional person, up to ten guests.

QUICK WEEKNIGHT MEALS: My most popular class at Local D'Lish. Three meals you can make in thirty minutes or less. You'll learn how to assemble a balanced sauce, what corners you can cut without sacrificing flavor or nutrition, the best kitchen habits to save you time, money, and mistakes. This class is vegetarian and can be made gluten free and vegan.

On the menu: Garlicky Noodle Bowl, Eggs in Purgatory (fall/winter) or Seasonal Quinoa Bowl with Sesame-Lime Vinaigrette (spring/summer), Best-Ever Sweet Potato Quesadillas.

ONE-POT WONDERS: This newer version of my "quick weeknight meals" class saves you time after eating as well as before. Three recipes, all tasty, economical, and quick. But this time, only one pot to wash. This class can be made gluten free; two of three dishes are vegetarian.

On the menu: One-Pan Pasta; Arroz Con Pollo (skillet chicken and rice); and Spiced Red Lentil Stew with Sweet Potatoes and Soft Greens.

SAUCES 101: In this class, I demystify five basic sauces for you before inspiring you to mess around with them at home to suit your own palates. You'll learn about ingredient substitutes (pine nuts sure are pricey), how to think outside the box (pesto's not just for basil!), the importance of salt and how to use it most effectively, and how to modify a recipe to incorporate fresh or preserved ingredients depending on the season (and what's in your pantry). This class is vegetarian; accommodations for gluten-free guests are available with notice.

On the menu: Anything-Goes Pesto (served with crudité and crackers); Spiced Tomato Sauce (served with roasted cauliflower); Cheesy Bechamel (over pasta); Shortcake with Cardamom Whipped Cream and 2-Minute Berry Coulis.

CHOCOLATE PLEASE: A decadent all-desserts class focusing on the best thing in the world. I recommend that you eat something beforehand so you don't die of sugar... In this class, each guest gets to bring home an individual portion of a dessert to share (or not). A gluten-free version of this class is available; the desserts in parentheses refer to the gluten-free options.

On the menu: Kir royale cocktails + local cheese and chocolate pairing; Salty-Spicy Brownies (or GF Flourless Chocolate Cake); Shortcut Chocolate Babka (or GF/Vegan Chocolate Mousse); Homemade White Chocolate Sauce with Frozen Berries.

"In Season" Classes

SEASONAL SALADS: Just what it sounds like, only way better. In this class we'll talk about what's in season when, while making the most of our bounty (or pantry when there's no bounty to be had). We'll make two "salads for dinner", two side salads, and you'll take home my Magical (and Infinitely Modifiable) Formula for an Amazing Green Salad. This class is dairy free and vegetarian; accommodations for gluten-free guests are available with notice.

On the spring/summer menu: Asparagus and Mixed Greens Pasta Salad; Massaged Kale Salad with Black Beans, Sweet Potatoes, and Spicy Cilantro Dressing; Green Beans Vinaigrette; and Carrot Salad with Honeyed Sunflower Seeds.

SEASONAL SOUPS: In this class, you'll go over the basics of how to craft a soup from scratch, maximizing flavor at every step. We'll experiment with finding "balance" when many flavors are combined, we'll get our hands dirty as we chop vegetables and juice limes, we'll let time do some of the work for us, and we'll leave with full, warm bellies. This class is vegetarian and dairy free; it can be made vegan with notice and I can accommodate gluten-free diets with notice.

On the winter/spring menu: Simple Carrot Soup with Lemon and Ginger; Herbed Tomato Soup with Red Wine and Ravioli; and Coconut Corn Chowder.

HOLIDAY SIDES: I'll share with you tips, techniques, and inspiration to revamp your holiday menu with a fresh approach to old favorites. We’ll substitute homemade sauces and vinaigrettes for condensed cream of mushroom soup. We’ll use artisan bread and midwestern Italian sausage to step up our stuffing a notch or two. Working together in stations, we’ll create the following sides before sharing appetizer-sized portions of each dish. Three of four dishes in this class are gluten- and dairy-free.

On the menu: Blanched Green Beans with Fresh Herb and Mustard Vinaigrette; Carrot-Sunflower Seed Salad with Honey-Lemon Dressing; Wild Rice Salad with Roasted Sweet Potatoes and Maple-Mustard Vinaigrette; Italian Sausage and Kale Stuffing.

Everyone Loves a Party! 

Classes below are 3 hours long. Spots in an open group class cost $70 per person; $65 per person if you purchase 4 or more seats. For private events, the cost of one of the classes below is $500 for up to 8 people.

BRUNCH FOR A CROWD: Expect to leave with recipes and a game plan. Next time you host brunch, you can sleep in and still wow your friends.

On the menu: No-Rise Cinnamon Rolls, What's-in-Season Quiche, Seasonal Brunch Salad, Homemade Chai, and Sunrise Sangria.

CHOCOLATE FOR DINNER: For the chocolate lovers among us - the novelty class of all novelty classes. We'll incorporate chocolate in all its splendid forms into a four-course meal. This class can be gluten free with some notice. Talk with me about a vegetarian version for your private event.

On the menu: Kir royale cocktails + a cheese and chocolate pairing to start the evening; mixed baby green salad with chocolate-balsamic vinaigrette, cacao nibs, and dried cherries; from-scratch chicken in mole sauce with local corn tortillas; either Shortcut Chocolate Babka or white chocolate sauce over frozen berries for dessert

MAMBO ITALIANO: My most popular party class! You'll learn how to make Italian favorites with an American spin and we'll all fantasize about moving to Tuscany as we sip Prosecco.

On the menu: Tomato Bruschetta, Massaged Kale Salad with Shortcut Caesar Dressing and Homemade Croutons, The World’s Best Lasagna, and Lemon-Ricotta Cookies.

MEXICAN BASICS AT HOME: Um… Mexican food. Made easy. That pretty much sums it up. In this part-demo, part hands-on class, we’ll start with a basic all-purpose Mexican seasoning blend and use it to make a bunch of our favorite Mexican comfort foods. Then we’ll eat them. It’ll be a regular fiesta! This class offers options for gluten-free, dairy-free, and/or vegetarian guests.

On the menu: Edith’s All-Purpose Mexican Seasoning Blend; Restaurant-Style Salsa; Basic Guacamole; Mexican-Spiced Ground Beef; Red Rice and Boozy Pinto Beans; and 2-Minute Skillet Quesadillas.

MEXICAN FIESTA: An extra festive variation on my Mexican Basics class. Super fun way to kick off a bachelorette party...

On the menu: Black Bean Soup; Best Ever Nachos with Homemade Guacamole and Restaurant-Style Salsa; Decidedly Non-Traditional Beer Margaritas; and Coconut Tres Leches Cake.

VIVA LA VEGAN: A vegan variation on my quick weeknight meals class! You'll learn not only how to make three delicious vegan dishes, but also how to shop efficiently, prep your meals for the week, and adapt my recipes to suit your schedule and your palate. This class is vegan and can be gluten free with some notice.

On the menu: Veggie-Packed Garlicky Udon Bowl; Sweet Potato-Black Bean Tacos with Homemade Plantain Tortillas and Spicy Cilantro Sauce; and Curried Tofu Spring Rolls.
